Have you made your Memorial Day plans? The Small Table Planning Committee is still juggling a few options for how to spend the weekend. In any case, a bigger holiday usually means a bigger party. If you are devoted, like I am, to generally making small desserts, this doesn’t have to be a problem. Almost every recipe on this site can be doubled (or more) with no sweat. The doubled cake pictured here fed eight people quite generously. Cakes lend themselves especially well to doubling, since they look so gorgeous when stacked. Sometimes I get crazy and frost the sides of my cakes, but many times I prefer the “rough-hewn” look of just artfully piling the icing on top with a fun garnish. Think: fruit, dried fruit, nuts, chocolate, whole herbs or spices, candy, sauce, sprinkles, citrus curls, sugar cubes, edible flowers (organic), or coconut.

To complete the presentation, many home-goods-type stores sell small cake stands that are meant for 6-inch cakes. It’s a little touch that nicely rounds out the moment.
